General Scope of Responsibilities

Under the supervision of the Camp Director, this position is responsible for cooking all meals and ensuring that the kitchen staff is working as a team in all food preparation, serving and clean up. This position is also responsible for food preparation recordkeeping and assisting with food inventory and ordering. In accordance with the mission and philosophy of Catholic Charities and the agency policies and procedures, this position includes, but is not limited to the responsibilities listed below.

Duties and Responsibilities

  • Kitchen Operations

  • Participate in training relative to the Summer Food Services Program (SFSP) and use of the Regional Food Bank.

  • Assist with the maintenance of food inventory on a daily basis.

  • Assist the Head Cook with food ordering and storage.

  • Ensure all meals meet SFSP requirements.

  • Ensure creative use of leftovers and minimizing food waste.

  • Assist in the coordination of meal preparation and cleaning of dining hall as necessary. This includes direct food preparation tasks (e.g., cutting, recipe following) and cooking techniques not limited to: frying, broiling, baking, roasting, steaming of meats and/or vegetables.

  • Ensure end-of-season close out is complete at end of contract.

  • Model and reinforce good food handling practices.

  • Follow and reinforce traffic flow of meal operations.

  • Mentor and model camp mission, practices and procedures for all staff.

  • Kitchen Task Coordination:

  • Provide input to Head Cook for evaluations of Kitchen Assistant;

  • Assist with kitchen staff in-service meetings during the camp season;

  • Communicate regularly with Head Cook about all kitchen and food related issues.

  • Participate in regular structured meetings with Camp Director to discuss kitchen operations.

  • Quality Assurance

  • Assist in the evaluation of the season’s kitchen operation and make recommendations for equipment, supplies and program operations for next season;

  • Participate in Department of Health, Regional Food Bank and State Education Department inspections.

  1. Risk Management
  • Ensure that the kitchen staff are using appropriate food handling, storage, cleaning and sanitizing procedures;

  • Ensure that non-kitchen staff have no entry to the kitchen and dish room areas;

  • Ensure that kitchen is locked after evening cleanup is complete;

  • Participate in all emergency drills and actual emergencies;

  • Complete accident/incident reports.

  • Paperwork and Recordkeeping

  • Maintain up to date food production records with the Camp Director;

  • Alert Head Cook to the need for food and kitchen equipment supplies.

  • Mission Effectiveness

  • Understand, articulate and integrate agency mission into Camp Scully program;

  • Ensure that Camp Scully operations are reflective of and consistent with the Catholic Charities mission.

  • Leadership

  • Interact with staff in a fair and just manner;

  • Foster a positive work atmosphere;

  • Participate as a team member in accordance with the Catholic Charities mission;

  • Communicate in a clear and direct manner;

  • Ensure a system of access and coverage during absences.

  • Other

  • Participate in regular meetings with the Camp Director and/or Head Cook.

  • Participate in Camp Staff meetings and other groups as requested by the Camp Director.

  • All other duties as assigned.

Compensation

Compensation is determined by current agency policy, pending approval by the Chief Executive Officer.
