East Rock Coffee Executive Chef in Garden City, New York

East Rock Coffee is a new upscale coffee shop located in the Garden City area and seeking experienced executive chef with a positive attitude to join our team.

We are looking for a seasoned and talented executive chef with fine dining, catering, and prepared foods experience. In this role you will create new recipes, and improve consistency across all locations and menus. While restaurant experience is helpful, this job requires a true understanding of how to turn the highest quality ingredients into dishes that will retain their appearance and flavor for an extended period of time. Covid-19 has created a huge demand for food delivery and prepared dishes that when eaten cold, re-heated or re-assembled taste as good as when first ideated. A true understanding of how ingredients or dishes maintain appearance over time and how lasting flavor is developed is imperative.

Responsibilities include: Work directly with owner creating new products for entire company Review current recipes for improvements across the board Lead and cook by example and provide guidance to all team members. Ensure kitchen operations are established and quality standards continue in your absence. Maintain and develop recipes, portion specifications, and standard preparation procedures for all dishes and ensure that all cooks are following these standards. Coordinate training activities for kitchen associates to meet service level standards. Determination of purchasing specifications and budgetary allotments for all menu items. Have a working knowledge of company invoice tracking, labor tracking, schedule preparation, food cost management, labor cost management, inventory control, and hiring, counseling, and termination policies. Make periodic and regular inspection of satellite operations to observe quality of food preparation and service, food appearance, cleanliness and sanitation of production and service areas, equipment, and employee appearance.

Requirements: 3 years experience as a chef in a fast paced environment Culinary School training

Pay: $900-$1400/weekly Commensurate with experience.
