Elior North America Culinary Administrator - Dining and Events in New York, New York

The Culinary Administrator is a member of the commissary leadership team. They work hand in hand with the culinary team and logistics team to produce requested menus. The Culinary Administrator works as a liaison between the commissary team and the sales teams to ensure client satisfaction.

Responsibilities :

  • Provides tactical daily leadership under the executive chef, including guiding and supporting business unit level planning and execution. Maintains a positive presence throughout the organization, including serving as an ambassador and role model of the CCG/Elior NA vision and standards. Facilitates a culture of commitment to the CCG vision of creating value through service. Accepts accountability for unit’s culinary performance along with other managers.

  • Provides tactical guidance and support to the culinary team to ensure the achievement of food cost and labor financial targets.

  • Assists in managing a high performing hourly team; monitors hourly employee timesheets, labor transfers, overtime, PTO and other employee issues. Submits employee information changes, rate changes, etc.

  • Manages and approves weekly hourly payroll

  • Manages job posts on all platforms, monitors new applicants, schedules interviews, processes new hire paperwork and onboarding.

  • Collects and processes all invoices including credits and skipped invoices

  • Enters and processes weekly product inventories

  • Assists with development of seasonal menus, recipes and associated costings for all outlets.

  • Communicating with the sales team to ensure they understand the menu and addressing any allergy issues and questions the client may have

  • Manage catering software including: receive and quantify all menus and process ongoing changes

  • Maintenance of catering software including entering, editing and maintaining new and existing menus while organizing and maintaining digital copies of recipes/menus

  • Manage professional dining menus and orders including menu development and implementation

  • Manage nutritional guidelines for all produced food

  • Create and maintain food prep sheets for all kitchen teams while keeping open communication with sales teams and unit managers regarding in progress menus, menu planning, requests, etc

  • Ensures the highest level of integrity and accountability in all business dealings; serves as a role model for excellence in all he/she does. Follows through on all commitments.

Knowledge and Skill Requirements:

  • Minimum 5 years relative experience, preferably in a high volume, upscale catering, restaurant, hotel or resort environment.

  • Superior leadership, management and analytical skills with a proven ability to deliver superior operational performance.

  • Ability to travel outside the establishment to visit and assist in other markets when and if needed

  • Strong communication skills, both oral and written.

  • Strong computer skills, including Microsoft Office Suite

  • Minimum Associates Degree

  • Able to stand for 10-14 shifts

  • Able to lift up to 30 lbs
