Delaware North Culinary Supervisor, The Gideon Putnam in Saratoga Springs, New York

The Opportunity

Delaware North Parks and Resorts is hiring seasonal Culinary Supervisors to join our team at The Gideon Putnam in Saratoga Springs, New York. Our ideal Culinary Supervisor is an experienced cook who enjoys working in fast-paced environment, taking pride in delivering high quality service and food to guests.

The position will include task force opportunities at other Delaware North locations throughout the winter. These opportunities will require travel for much of the winter months from December through April.

Responsibilities

  • Supervise all team members and ensure food preparation and production meets quality standards

  • Maintain the cleanliness and organization of walk-ins and freezers and ensure all kitchen equipment is in working order

  • Effectively supervise proper breakdown, rotation, labeling, dating, and storage of food

  • Perform opening, closing, and side work duties

  • Maintain/adhere to daily time/temperature

  • Actively work to maintain food cost within parameters set by culinary leadership

  • Partner with team members and restaurant managers to satisfy guests

  • Maintain/supervise proper Department of Health cleanliness standards and organization of all areas of kitchen, back dock, walk-in coolers, dish, production and line

Qualifications

  • Culinary school is preferred

  • No college degree required

  • Proven knowledge of culinary arts, required with a minimum 2 years Lead line cook/Supervisory experience

  • Proven culinary knife skills and manual dexterity needed

  • Experience in large volume/ banquet/batch cooking HACCAP logs.

  • Some computer work may be necessary, and knowledge of Excel/Microsoft Office is helpful

  • Basic math skills with an ability to understand, calculate, and follow recipe measurements and actively work to maintain proper food cost, and production amounts and eliminate food waste

Physical Requirements

  • Manual dexterity is sufficient to chop, mix, blend, whip etc. a variety of foods and liquids

  • Ability to lift and carry large pans from ovens or freezers, weighing up to 50 lbs

  • Standing and walking for the entire length of the shift
