POSITION SUMMARY

To expose a student from an accredited culinary program to the full aspects of catering. He /She will be spending time in all departments that reflect their initial school curriculum. He / She will have the opportunity to learn how each area impacts the business and our clients. He / She will be exposed to both front and back of the house operations and should see how a full scale catering operates. This program will be determined by the length of time required by the participant’s school.

ESSENTIAL JOB FUNCTIONS

  1. Working in the production aspect of the kitchen to learn system and procedures.

  2. Learn about food storage areas and how they are maintained.

  3. The understanding of kitchen labeling and coding of finished product for events.

  4. Learning how to produce items in volume

  5. The introduction to events and how they are separated by cocktail receptions and main course.

  6. Assisting the Chef of a party and learning the steps and timing of each event.

  7. Introduction to HD’s to include learning, setup and execution.

  8. A brief introduction to Purchasing with focus on bids, pars and receiving.

  9. An introduction to the pastry department to allow the student to see how they work and prepare for events.

  10. An introduction to hot sauces and cold sauces. This allows the student to practice basic skills such as chopping, sautéing, and roasting.

  11. Introduction meat and fish butchery.

  12. Travel, as necessary, to different properties/venues.

  13. Perform all reasonable requests by the management team.

  14. Attend and participate in all scheduled meetings and training sessions.

QUALIFICATIONS

  • Minimum of 6 months prior experience in the culinary field.

  • Knife skills that are able to perform basic cutting/chopping techniques.

  • The ability to read and understand a recipe.

  • Ability to work in a team oriented atmosphere.

  • Ability to organize ones daily tasks effectively.

  • Able to meet deadlines and to follow directions.

  • Ability to communicate effectively with associates, management, clients and vendors if necessary.

  • Able to work flexible schedule in order to accommodate business levels.
