Cornell Cooperative Extension 4H Camp Hidden Valley: Kitchen Manager - Watkins Glen, NY in Watkins Glen, New York

The mission of Hidden Valley 4-H Camp is to provide youth with a fun, residential camp experience under the guidance of positive role models that emphasize community building, positive social interactions, environmental awareness, and skill-building.

The Kitchen Manager is responsible for planning and implementing camp meals, overseeing kitchen staff, and educating campers on cooking skills and healthy meal choices. The Kitchen Manager is not required to live on the camp property, although they may be required to stay during the summer as needed.

Duration

The summer camp season includes one Senior Staff week beginning June 23rd, one week of mandatory staff training from June 30th through July 7th, and five full weeks and one partial week of residential and day camp running from Sunday at 11:00 AM to Friday at 6:00 PM except the weekend starting August 9th. This weekend will be a working weekend for all camp staff. The specific dates the Camp is in operation are July 7th through August 13th. The Kitchen Manager will remain on the camp until August 13th to assist in the cleaning and closing the camp facility, particularly the kitchen.

Specific Responsibilities

  • Oversee and organize the opening of the kitchen with the Assistant Kitchen Manager and camp staff

  • Make all food purchases in consultation with Camp Director

  • Keep records of all food purchases at the beginning and during the camp season, including quantities used and food returned or sold to dealers

  • Be available during all food deliveries, check incoming food against food invoices, and oversee all food storage.

  • Plan and run the Culinary Master Camps with assistance from the program staff.

  • Plan menus and control food budget, figuring meal costs and per person per day costs

  • Strictly follow and enforce sanitary standards based on the New York State Department of Health Codes

  • Follow the NYS Department of Health regulations and guidelines as outlined in the Camp Plan

  • Oversee kitchen staff by creating schedules and specific responsibilities

  • Create an inventory of all kitchen equipment before the season and upon the completion of the season.

  • Set up efficient mealtime procedures

  • Assist in filling requisition requests for special meals and weekend meals

  • Assist with the ACA requirements in the area of Food Service and Safety in the kitchen area

  • Support and embrace diversity in all interactions with campers, other staff members, volunteers, and parents. Implement programs that engage diverse backgrounds, interests, and learning styles.

  • Other duties may be assigned as required

    Preferred Qualifications

  • 21 years of age or older

  • Experience with food management

  • Ability to cook for large groups

  • Food handler’s certificate, as required by local and state law

  • Ability to communicate effectively with the Camp Director, work as part of the team at Hidden Valley 4-H Camp, and with both campers and camp families.

    POSITION DETAILS:

This is a full time, (TEMPORARY) exempt position.

Salary and Benefit Details

The rate of pay will be $4500.00. (Rate will be reduced for any time scheduled but not worked during the period) The pay rate is commensurate with experience, certifications, responsibilities, and availability. Benefits are not available for this position.
